Super Easy Egg and Bacon Muffins

Ingredients:

3 rashes of short cut bacon

6 slices of bread

6 eggs

Handful of grated cheese

Butter (to grease the muffin tray)

Salt and Pepper

 
We all have those mornings where getting out of bed is actual hell. For some it’s the daily start of a long and boring work day, for others aka myself, it’s because you indulged a little too heavily in last night’s festivities. Whatever the reason, sometimes the thing that can really get your day starting off on a positive note is a really yum, filling breakfast. Lovely people, I have the easiest, tastiest morning snack to start your day off with a bang. Crispy toast bowls filled with melted cheese, crispy bits of bacon and to top it all off an oven baked egg. This recipe is pure bliss!

To start off, you’ll want to preheat your oven to 250 degrees Celsius. Grab a muffin tray, and grease the inside with butter. This stops the bread from sticking, and lets the bread get crispy whilst it’s cooking in the oven.

Dice your bacon and cook on high with a splash of olive oil until brown and crispy. Set aside once done. To make your bread bowls, you’ll want to grab a cup and cut 6 circles out of your bread slices. Push the cup down firmly and twist the glass slightly to get the circle out neatly. Once done, press the circles of bread into the muffin tray, add a teaspoon of bacon to each bowl and a sprinkling of cheese. Crack an egg over every bowl and season with salt and pepper. Turn the temperature down to 200 degrees Celsius and cook for 20 minutes, or until set.

These can be made in advance, they also make an excellent lunch snack. These little pockets of yumminess will quickly become a go to in your morning breakfast ritual.
